It’s THAT time again, back to school shopping! I’m not lying, I’m kinda looking forward to this chapter. A sense of structure, a fresh beginning and a new bouquet of pencils are all my favorites. How about you? How do you feel about the school season kicking off? While some schools are still uncertain as to IF they are returning in the fall due to the virus, I still think many of us are excited for school season. Our kids are excited for new books, fresh starts, and of course new gear! New gear ALWAYS helps. I remember as a kid being so excited to pick out my new trapper keeper, colorful pens, pencils and folders. Who knew office supplies could be such a buzz? I honestly love these journals from Walmart because my boys can write about something they saw in the yard as there is a portion to draw and write. These little nature journals are inspiring and less than the price of a latte. Let the learning begin!

I ordered some back to school gear, a pool and new clothes for the kids. We just measured Atalie and she is 5’5″! Wow! So I bought her new shirts and shorts.

Do you have 3 rotten bananas at home?

Those rotten bananas can easily be made into yummy gluten free and dairy free banana muffins. I made these last night to go with our dinner and I got requests for seconds and thirds, a rounding success! Here’s the recipe for the blueberry version of this recipe.

Ingredients:

2 1/2 cups almond flour (I have the one I use on my Amazon page)

1/2 cup sugar

1 1/2 teaspoon baking powder (I use aluminum-free)

1/4 tsp salt

1/3 cup avocado oil or coconut oil

1/3 cup unsweetened almond milk

3 eggs

3 ripe bananas, smash and mix them in.

A dash of cinnamon (optional, but I love the added flavor)

Mini Chocolate Chips (optional but wow this adds tons of flavor)

Directions:

Preheat oven to 350. Mix all ingredients, bake for 20-25 min. They’re ready when the toothpick comes out clean and the top is golden brown. Enjoy!

I keep getting asked, what’s in my salads? I love love a good salad to the point that I get excited to eat it! Here’s the ingredients give or take a couple extra items I have in the fridge.

Organic Spring mix (I place a paper towel in the plastic container so it doesn’t rot the next day)
1 ripe Avocado
Green (I like manzanilla don’t get low sodium) and black olives (I liked sliced in a can)
Roasted sunflower seeds
Homemade balsamic vinaigrette (see recipe below)

Balsamic Vinaigrette (recipe can be doubled)

Mince 2 cloves of garlic and add the following ingredients in a small jar with lid:

1/3 cup avocado oil (or canola oil)

2 T balsamic vinegar

1 tablespoon sugar or 1 tablespoon of agave

1/2 t. salt (I use pink salt)

Shake vigorously and serve. Store in fridge up to a week.

My Espresso Machine

I literally sit in my bed in the morning dreaming about my cappuccino that I cannot wait to enjoy. Thanks to my Nespresso Creatista machine. It’s durable, makes super hot coffee and espressos, and heats up the milk like a dream. It has an adjustable espresso option, milk temp and froth level. Love the options to have either a cappuccino or flat white. We are careful to keep the milk warmer clean to ensure the best lattes. I use almond milk and Reid uses regular milk and both works well. If $599 is out of the budget, I also show below the smaller options which we also have for our guest room. At $149, it is no frills and a great dependable cup of joe (or espresso).

I got asked recently, what are my top straw hats for summer. They are in fact the best and easiest ways to keep the sun rays at bay while still looking chic. Even as a busy mom juggling a toddler, SPF spray, snacks, and trying to keep the wrinkles at bay, you can still look like the cat’s meow. If the juggle is real, shop all 5 straw hats below.
