Do you have 3 rotten bananas at home?

Those rotten bananas can easily be made into yummy gluten free and dairy free banana muffins. I made these last night to go with our dinner and I got requests for seconds and thirds, a rounding success! Here’s the recipe for the blueberry version of this recipe.

Ingredients:

2 1/2 cups almond flour (I have the one I use on my Amazon page)

1/2 cup sugar

1 1/2 teaspoon baking powder (I use aluminum-free)

1/4 tsp salt

1/3 cup avocado oil or coconut oil

1/3 cup unsweetened almond milk

3 eggs

3 ripe bananas, smash and mix them in.

A dash of cinnamon (optional, but I love the added flavor)

Mini Chocolate Chips (optional but wow this adds tons of flavor)

Directions:

Preheat oven to 350. Mix all ingredients, bake for 20-25 min. They’re ready when the toothpick comes out clean and the top is golden brown. Enjoy!

There are so many great boots out there, but the truth is, you don’t need all of them. I gathered some of my favorites that pack a lot of style punch for one outfit. I’ll admit, one of my favorite searches to do is for a “CHUNKY KNIT.” I mean, what other sweater knit is there? I love the texture and feel and nothing is more fall ready than a sweater. Agreed? Some weekends are a little haphazard around here. 7 people, countless loads of laundry yet to be folded, chex mix stuck in the carpet, yarn and paper cuttings line the rug underneath the dining room table, will our house ever be clean? While the future looks bleak for the answer to that question, I can do something about it. I did some research about WHAT MAKES A PRODUCTIVE WEEKEND? What is it you think? Writing notes, sticking to a list? Outsourcing? All those things aren’t bad. I was surprised to find, it is a couple little things in succession for good planning. Who wants a productive weekend?? I DO!

  1. Stay off Social Media. Ouch. But truly, scrolling instagram and watching stories is the fastest way to wasting time.
  2. Make a list. Stick to it
  3. Be aware of your productive hours and tackle the hardest tasks during those hours.
  4. Make muffins Sunday night for an easier Monday morning breakfast.
  5. Make a list of do-to’s and projects you need to follow up on for Monday. I can’t say enough about following up!
  6. Grocery shop or order your groceries for Sunday delivery. Decide the meals for the week, and post it on the fridge to be more organized. And also so you’re not tempted to eat out. I usually write down about 4 meals give or take one meal we go out or eat leftovers.
  7. BONUS – Hire an organizer. I have a girl who comes once a week to help me stay organized. She keeps like things together, and can sort my pantry or closet. Invaluable!

I get a lot of questions about my routines from diet to keeping it up with it all.  Read on for some tips! 

WHAT IS YOUR MORNING ROUTINE LIKE?

To avoid getting hangry, I take two scoops of Vital Proteins Collagen Powder (non-flavored) in my almond milk latte every morning. 

The benefits of collagen are many. It’s the most abundant protein in your body. It can relieve joint pain and improving skin health. I’ve personally noticed better hair quality and stronger nails. After all, increased skin hydration leads to less wrinkles. Do I have your attention now?

 

AFTERNOON ROUTINE?

Multi tasking is key. 

I drink Dandy Blend with one scoop of collagen protein and almond milk and snack on salted almonds or kale chips as I respond to e-mails.

I work on my pilates ring while I help the kids with their homework.  Yes they think I’m crazy.  The pilates ring tones my inner thighs.  I even bring it in my suitcase when we travel.

 

Kale Chips

1 big bunch of organic kale, washed and dried

pinch off the leaves from the stalk into small pieces

drizzle with avocado oil and sea salt

Bake for 15 min on 350 degrees

I get a lot of questions about what vitamins I take on the regular. I take a prenatel vitamin since I’m still nursing and b12, since I’m off coffee. Don’t think for a second this mama doesn’t run on some kind of vitamin in place of a legal addictive stimulant. I link both below that I take daily!

WHAT ABOUT YOUR DINNER ROUTINE?

Tonight we are having lemon chicken and oregano potatoes tonight. We have a ton of meyer lemons on our bush in our yard so I’m making that with oregano. It’s delicious. I’m making it in the crock pot because I tend to burn everything. Want the recipe? Look below:

Chicken and Potatoes

1 whole chicken or a couple chicken breasts (whatever I have on hand)

Avocado oil

Garlic

4 lemons freshly squeezed

1 cup of water or enough to cover the potatoes

4 large potatoes peeled and chopped

oregano

Sea Salt

If it’s a crazy busy day ahead, start in the morning and throw it in a crock pot. If not, place all ingredients in a 9×13 dish and cook for 1 hour in 350 degrees or until chicken and potatoes are tender. The lemon makes the sauce amazing! Serve with rolls and a green salad.  Top off the salad with my homemade salad dressing here! 

CHORES! Do your kids do them?

Oh the dreaded word!! But seriously it HAS to be done. Other things that help laundry and organization are giving each of my kids a chore that is age specific. My oldest does the laundry, second daughter loads/unloads the dishwasher, oldest boy (#3) takes out the trash and the 5 year old takes out the small trash cans from the upstairs bathrooms. I will not claim that my kids do their chores without reminders (nagging) or without some bribing and I’ll admit I have to do lots of incentives, but it eventually gets done. For example, a popular incentive in my house are healthy lollipops. I use those candy on a stick for everything and MANY TIMES A DAY !! :)))

  1. Lunch box woes? Wanna keep their food separated? No problem. Place cupcake holders in your kids lunch box and food will no longer touch.
  2. Picky Dresser? I have four. So as you can imagine getting dressed can be really stressful. I let them pick their own shoes and I put out their clothes the night before. We discuss it so no surprises and when they come home they can slip right into their favorite (may I add ratty) running shorts and flip flops. We can’t win every battle but compromise helps!
  3. Speaking of organizing closets, do you know you can use shower curtain hooks on their closet rod to keep jewelry bags and even jeans organized.
  4. Keep Canker Sores at Bay. My friend Aylin told me about BORAX homeopathic for canker sores and it works! Also take B complex and dab some milk (yes, milk!) directly on their canker sore.
  5. Use a Lazy Susan in the fridge for the most grabbed for condiments – for us its the pickles, maple syrup and ketchup. No more, “mom, where’s the ketchup?!” Well, no guarantees.
  6. Need Meals in a pinch? 20 Freezer recipes for those long homework and no time to cook kind of nights. Wait, isn’t that every night? Ha, I’m kidding. I’m also sharing 3 of our go-to recipes HERE.  And sharing my go-to dressing recipes on the blog HERE.
  7. After school Slump? Make Energy Balls! After you make them, place them in the freezer and they’re a great snack with chocolate AND fiber. The latter they will never know about. NO BAKE ENERGY BITES 1 cup rolled oats, 1/2 cup chocolate chips, 1/2 cup ground flaxseed meal, 1/2 cup crunchy peanut butter 1/3 cup honey or maple syrup. Arrange in balls and freeze until set. About an hour. Enjoy!
  8. Schedule is EVERYTHING. My friend Eva puts her kids on the school schedule one month prior to school starting so they ease into school without the shock factor and sour attitudes.
  9. MAKE AHEAD for that rainy day. Make chicken or vegetable soup in a large batch and freeze in individual portions for those days they will get sick at school. I like this recipe. Also, make a batch of sugar cookies and freeze them in dough balls for that day your child is asked to bring a dozen cookies. You know if will happen!
  10. Need to get grape juice out of clothes? My daughter spilled the communion juice on her new dress Sunday and I just about flipped. I ended up putting soap on it immediately then soaking it in Dawn soap when I got home and running it through the wash. Violà! I also found this recipe: Mix one tablespoon of white vinegar and 1/2 teaspoon of liquid laundry detergent with one quart of warm water. Soak in this solution for 15 minutes. If the stain remains, sponge with rubbing alcohol and rinse thoroughly
  11. Did the kids leave crayons in the car melting in the summer heat? Mine did today actually. They left 5 crayons in the cup holders and I hurry googled how to get crayons off of plastic after I made them try and clean it of course. Here’s what I found to help: Spray the affected plastic with WD-40 or another oil-based car part lubricant. Vinylex Quick Wipes by Lexol also work wonders. Leave it on for 3 minutes. Wipe the plastic with a soft cloth. If any residue remains, wash it off in a circular motion with warm, soapy water and a sponge.

20 Weeks

Halfway there this week and a lot of you have asked how I’m feeling. While I’m so grateful to have the hemorrhaging behind us,  I’m feeling lots of fatigue, leg pain, and let’s face it I can barely face an afternoon without dreaming of a nap. What is super cool, is feeling baby boy move, and hearing the kids baby boy name suggestions from John to Isaac to even suggesting their own names. Original eh?

Hello second trimester! I’m happy to announce the baby weighs 10.5 ounces and roughly the size of a banana! While he FEELS a lot heavier than carrying around a banana, there is consolation in knowing we’re halfway to meeting our little guy face to face!

I’m currently craving . . . .salads! I cannot get enough and anything covered in salt. Real healthy. However, I make my homemade dressing recipe daily and if you have a new favorite, email me!

As for preparation, we have cleared a potential room for the baby – and no new baby gear to report other than two Pack ‘n Plays and 2 diapers bags. I’m finally getting comments often like – “Wow you really popped!” and “Do you know what you’re having?” But its really our kids who make it most fun by rubbing my belly daily, saying prayers for baby boy, and asking me every day if he moved and how’s he doing. I’m loving experiencing this with them, through their little eyes! I feel really grateful for that, melting all the leg pain and making all of those 50 trips to the bathroom, worth every trip. God’s gifts are good. Happy 20 weeks baby!

Everyone loves a good Q and A! I get a lot of FAQ, so I thought I’d answer some of them here:

How is this pregnancy different?

I forgot how much you need to visit the restroom, I’ve never had 4 sets of hands on me constantly rubbing my belly. And cravings are daily!

How are you feeling?

More energy now that I’m not sick, but evenings are still hard. I can’t eat a big dinner or I feel naseous.

What are the kids most excited about?

All things baby! Taking him to the beach, the pool their favorite park, etc. They are already so in love, I love seeing their excitement, it really melts me. I thank God for these moments!

What are some of your favorite mom hacks?

Get a keratin treatment! I was doing weekly blowouts  before my keratin treatment. After the treatment, my hair was silky, smooth and straight! All mamas rejoice! Also, Buy Lash Boost, no this is not an ad. I used to schedule a lash extension appointment 2+ hrs, lay for that long, organize a sitter and it cost lots of money! I got smart and apply lash boost every night and my lashes and eye brown grew out beautifully even after the sad effects of lash extensions. If you’re not familiar, long lasting use of lash extensions can stunt the growth of your natural lashes.

How do you find time for the gym?

My kids happen to love the gym nursery (Thank God) and I love new workout threads. I’m taking it easier now pregnant, but still toning with weights.

What’s next for the cabin? 

Good question! It’s the fun stuff! Lighting, I just ordered a rug off Etsy, (who doesn’t love free shipping? 🙂 I’m looking for bunk beds and futons, so if you know of any, shoot me an email!

What’s your latest cravings?

Goat cheese, pickled beets, good dressing like homemade balsamic vinegrette, raisin bread, sometimes eaten all together. My kids remind me how weird my eating habits are!

How are the kids, what are they into?

They recently got a bunch of books from the library about paper airplanes and they’re addicted.  We have paper airplanes flying all over the house, good and bad.

Using Accessories to Dress Up a Laid-Back Look

Who has tried the baker boy hat trend? I’m loving it for spring weather! Hats are one of my absolute favorite accessories. And speaking of accessories, I love using them to spice up a really laid back look.

 

With these cotton, cropped joggers and this completely adorable and super chunky sweater, I needed something to spice it up and make it feel a little less winter-cozy. Spring is almost here and pink moments like the baker boy hat and these amazing flats are necessary. If you’re in the market for some cute slides with a statement bow, I highly recommend.

Puzzles! One of our sitters got us hooked on them. The brand Ravensburger is my favorite. My sister got me into them and you can buy them on Amazon.

What is your nacho seasoning recipe I saw on IG Stories?

Good question! Here it is adapted from this site:

1/4 cup coconut oil

1/2 cup white popcorn (I prefer white over yellow popcorn for the taste)

1/4 cup nutritional yeast

1 tsp salt

1 tsp Ground Paprika

1/2 tsp Garlic powder

1/2 tsp Onion powder

1/2 tsp Chili powder 

1/4 tsp Ground Cumin

1/8 tsp Cayenne Pepper

Optional: I add brown sugar and grape seed oil to taste. So yummy, my kids love it!

Why are you not going to NYFW?

Honestly, if I had a for me to travel and leave the family, it takes a village! Like last year, I had more work here in LA than NYC, and frankly, it’s hard to leave the LA weather.

What is your go-to daily moisturizer, I’m in the market! Also what was the retinol A cream your facialist recommended?

My daily moisturizer is TULA, use SHALICE for 20% off, and my facialist recommended this cream.  She also was happy that I use LED spa device! She said the results are great when you stay consistent with it. She asked how I made time to use the LED light and I said I do it while drinking coffee, brushing my teeth, making omelettes and let’s be real, isn’t every mom trained to do everything with one hand?? LOL.

Sunday’s are always a mad dash to get to church by 9am, but it also happens to be one of my favorite days. Hubby usually makes pancakes or puffed pancakes, we bond over meals together, something mid week is lacking, and go to church, usually out for lunch than hang at home or take a nap.
